SINIGANG (Sour-Flavored Soupy Dish)

I am not a linguist… just someone who is curious about the source of food names.  On the subject of Philippine dishes, I note that the letters “in” are inserted into a verb to signify the action of said verb on a certain ingredient to make a dish.

Take for example, sinigang.  The verb is sigang, and sinigang denotes that something was sigang-ed, as in sinigang na baboy (pork sinigang).

Other examples:
 
Pinirito, from prito (fry), indicates that something was prito-ed, as in piniritong manok (fried chicken).
 
Kinilaw, from kilaw (marinate in citrus), indicates that something was kilaw-ed, as in kinilaw na isda.
 
Sinaing, from saing (boiled), indicates that something was saing-ed, as in sinaing na tuligan (steamed tuna).

I would just like to emphasize that discipline is very necessary if one shall try herbal remedies which require consistently patient preparation. On the other, conviction resulting from “conversion” to the nutritional benefits of Philippine indigenous vegetables is necessary before one can make the edible leaves and roots part of his or her diet – for consistency’s sake. The following are enhancements to what I have already written on this subject:

MALUNGGAY (MORINGA) – this plant is a “must” in every Filipino’s yard;  for those living in the city, it can be planted in plastic containers that saw good old days as “water bottles” on dispensers; the juice of the mashed leaves can stop bleeding even of open wounds in seconds; the dried seeds can lower the level of bad cholesterol; one of the discoveries of archaeologists in Africa were several thousand year-old water jars with dry malunggay seeds at the bottom, proof that the seeds were used as anti-bacterial; it is considered as among the “miracle” plants, infused by nature with plenty of nutrients, that is why, it is being used as enhancer for instant noodles and rice porridge to make them healthy, and fed to the children in feeding programs; it is not bitter as many people believe; the leaves can be air-dried, crumpled or powdered and stored; a teaspoon in powder form can be added to a mug of coffee, while the crushed  dried leaves can be added in pasta sauce, as well as, vegetable dishes, especially, monggo, or in fried rice.

SOFT, YOUNG GUAVA LEAVES – in my earlier blog, I forgot to mention that the guava leaves tea can alleviate the diabetes; the finely chopped young leaves can be added to salads, to lessen the tangy taste and odor of onion; it is suggested that the tea be always ready on hand as an after-meal deodorizer of the mouth; the fruit, I still maintain, to be more laden with vitamin c than citrus; my day is not complete until I drink at least two mugs of this tea.

LEMON GRASS (TANGLAD) – this herb can be frozen even for one month (I have tried it), but first, each root with stem must be cleaned thoroughly and entwined or interlaced before being kept in a plastic bag, to save on space in the freezer; the tea can alleviate colds aside from purportedly weakening cancer cells; before the “guyabano craze” hit the herb market, lemon grass was already very popular in Europe; an Israeli travel agent enhances his Holy Land package tours for Europeans by offering a side trip to a “desert  garden” for unlimited cups of lemon grass tea;

PAPAYA – the green fruit is full of vitamin C and has anti-cancer properties; the leaf has similar use as “tawa-tawa” grass, as the tea from the boiled leaf can increase the red blood cell count of the dengue victim; the ripe fruit can give one comfort in moving his or her bowel; the seeds can be dried, peeled and eaten as they are also full of nutrients; the dried seeds can also be added to guyabano and other leave to be boiled into tea.

LUPỘ – this is a wild indigenous vegetable more known among the Ilonggos, and lately, found to have anti-cancer properties, as just like the turmeric, it also blocks the passage of food to the cancer cells, thereby, starving them; it grows in rice fields and swamps; the vegetable can combine well with mongo or any fish dish, especially, milk fish or bangus.

CHILI – strengthens the immune system; its ‘hotness’, however, poses a problem to those who are suffering from hemorrhoid; if it cannot be avoided by people with the mentioned problem, suggested is drinking plenty of water to dilute the “hot substance” of the fruit, after meal; in my case, I add plenty of pounded fresh chili to the jar of salt, bottles of olive oil, canola oil, and palm oil to make them really hot; I add at least two spoons of dry chili flakes in any dish, or sprinkle them on fried rice, and instant noodles; I also add chili flakes to tomato sauce for my pasta;

PERIWINKLE (PAGATPAT) – the tea from boiled leaves can cure cancer as supported by testimonies of patients who got cured of breast cancer after religiously drinking tea from boiled leaves; it is really bitter, but if only for its medicinal value, one should endure the taste which I am doing, as the bitterness also neutralizes the sugar level in the blood; the tea cleanses the kidney; suggested intake is every other day of the week.

AMPALAYA (BITTER GOURD) – the sliced vegetable must not be mashed in salt and squeezed of its bitter juice as it becomes useless; the best way to lessen or remove the bitter taste is just to soak the sliced gourd in cold or iced water for about ten minutes – do not squeeze, just put the slices in a colander and allow them to drain; the fruit and leaves of this vegetable can prevent diabetes.

The Philippines is so blessed by Nature with plenty of plants with edible fruits, shoots, leaves and even flowers. Unfortunately, because of the “colonial mentality” that developed with the arrival of the Spanish and American colonizers, many of the Filipinos forgot about them or worse, refuse to eat them, in favor of the “western” vegetables such as cabbage potato, and many others, although, considered as nutritious, too, but comparably expensive. This mentality sort of, got worsened lately, with the influx of imported vegetables and fruits from other countries, especially, China and the United States. There is no question about the nutrients found in the imported vegetables and fruits. What I am driving at here, is that indigenous vegetables and fruit trees can be planted in our yard or any vacant lot! Can the same be done to the imported “food stuff” that may have been sprayed with insecticide to preserve them while in transit?

Pera ang isa sa mga dahilan ng pagkasira ng samahan ng magkakaibigan at magkakapamilya. Sa diretsahang salita, ito ay dahil sa pangungutang ng mga oportunista na umaasang hindi sila sisingilin, kaya kung siningil naman ay sasama ang loob nila. Dapat baguhin na ang ganitong ugali – ang umasa sa ibang nakakaluwag. Kung may mga tao mang nakakaluwag sa buhay, ito ay dahil ngsikap sila para sa kanilang mga pangangailangan. At, hindi dahil “nakakaluwag” na sila sa buhay ay milyonaryo na sila. Ang kaluwagan ay nangangahulugang mayroon silang naitatabi upang madukot sa panahon ng kanilang pangangailangan. Tinatapatan naman ito ng mga mga oportunista ng linyang, “ipagamit mo muna sa akin yan….hindi mo pa naman kailangan”, subalit wala naman palang balak magbayad, o magbayad man ay masama ang loob at may panunumbat pa.

Dapat matutong mag-ipon para sa ibang pangangailangan. Ang piso ay dumadami kung ito ay dadagdagan, kaya huwag  itong hayaang nag-iisang piso lang. May iba kasi diyan na kapag mababa sa isandaang piso ang hawak, ang tingin nila dito ay hindi na pera, kaya kung waldasin ay ganoon na lang. Nariyang ibigay na lang sa mga anak upang gastusin sa internet games, o di kaya ay hayaang nakakalat lang sa loob ng bahay. Sa isang bahay na pinasyalan ko, ang mga barya, pati beyntehin at limampu ay nakapatong lang sa isang ibabaw ng mesa sa sala. Subalit bistado ko rin ang may-ari ng bahay na walang patlang ang pangungutang sa Bombay.

Ibatay sa uri ng pinagkikitaan ang paraan ng pag-ipon. Kung arawan ang kita tulad ng pagtitinda, dapat, araw-araw din kung magtabi ng ipon. Kung suwelduhan naman na 15/30, dapat tuwing suweldo naman magtabi ng extra. Dapat hindi galawin ng kumikita araw-araw ang kanilang puhunan upang hindi mapilitang makapangutang. Ang iba kasi na may ganitong pinagkikitaan, ang tingin sa kinita sa buong araw ay talagang “kinita” lang…hindi nila naisip na kasama dito ang puhunan at tubo, kaya ang dapat galawin ay ang tubo lang.  Ang mga suwelduhan naman, kapag natanggap na ang sahod, ang papasok naman sa isip ay may susunod pang suweldo, kaya okey lang na waldasin ang katatanggap lang na sahod.

Hindi na natuto ang iba sa kasabihang “kung maiksi ang kumot, matutong mamaluktot”. Kahit ang badyet halimbawa ay kapos, ayaw nilang magtipid. Kung ano ang gastusin nila sa panahong nakakaluwag sila sa pera, ganoon pa rin ang ginagawa nila kahit kinakapos sila kaya dinadagdagan nila ng perang inutang ang kakulangan. Sa panahon namang may pagkakataong makaipon sila, todo pa rin ang gastos hanggang maubos ang pera. Kaya lumalabas na talagang walang limitasyon ang gastos nila hangga’t mayroon silang hawak na pera. Walang pagkakaiba sa kanila kung ang hawak nila halimbawa ay sampung libo o isandaan libo, dahil parehong ubos pa rin. Ang lalong nagpasama sa inaasal ng mga taong iresponsable kaya walang naiipon ay ang ugali nilang pandadamay ng ibang tao. Nag-aalala ang mga talagang walang maipahiram na pera. Ang iba namang ayaw magpautang ay gusto lang turuan ng leksiyon ang mga walang konsiyensiyang oportunista na kaibigan o kamag-anak.

Dapat alam na ng mga madalas umutang kung ano ang kanilang mga pangangailangan at kung kaylan dumarating ito, upang mapaglaanan nila ito ng karampatang ipon. Hindi maaaring idahilan ang maliit na sweldo o kinikita, dahil ang mga gastos ay dapat ibatay sa mga ito. Halimbawa, kung hindi kaya ng sweldo ang bayad sa tuition ng anak sa private school, bakit hindi ito ipasok sa public school? Kung kaya namang ihatid at sunduin sa eskwela, bakit iuupa pa ng school bus o tricycle? Kung ang kayang ulam sa araw-araw ay isda at gulay, bakit hindi gumawa ng paraan upang lalo pang makatipid sa halip na umasam pa ng karneng baboy, baka o manok? Wala namang namatay sa hindi pagkain ng karne. Maari rin namang kumain ng karne isang beses sa loob ng isang linggo.  Ang matindi ay ang pagsanay ng mga magulang sa mga anak sa pagkain ng hotdog, hamburger at kung anu-ano pang hindi naman masustansiya, at dinadagdagan pa ng mga chicherya na pang-meryenda. Kaya tuloy may ibang bata na ayaw kumain ng kangkong o talbos ng kamote o sitaw, o galunggong man lang. Sino ang may kasalanan ngayon? May iba pang magulang na nagmamalaki sa pagkuwento na ang anak nila ay hindi kumakain ng gulay at kunwari ay may pahimutok pang sinasabi na, “ewan ko ba”, ganoong alam naman ng iba na kung hindi sila mangutang ay wala silang maisasaing na bigas. Yan ang kaplastikan at kaartehan ng iba!

Ang diskarte ng isa kong kaibigan, si Liza, ay ang pagkaroon ng “food bank” sa kusina. Pagkatapos niyang bayaran ang mga buwanang obligasyon tulad ng kuryente, tubig, at ipa ba, ang natirang pera ay binibili niya ng mga sangkap para sa mga pagkaing karaniwang inihahanda sa party, tulad ng pansit at spaghetti, kaya nakakaipon siya ng mga de-lata, pasta, behon, miki, olive oil, tomato sauce at iba pa. Ginagamit niya ang mga ito sa paghanda kung magbertdey ang mga anak, pasko at bagong taon. Basta may sale, at may ekstra siyang panggastos, bumibili din siya ng mga pangregalo sa pasko. Dahil sa diskarte niya, hindi siya natataranta at lalong hindi nakapangungutang pagdating ng pangangailangan niya.

Ngayong papalapit na ang pasko, hindi na magkandaugaga ang iba sa pag-isip kung ano ang ihahanda o idi-display sa mesa, lalo na ang pagkain sa kapaskuhan at bagong taon. Ang hindi nila naisip ay wala silang pera, kundi mangungutang lang sa iba, lalo na sa Bombay! Kung gusto nila ng maluhong pasko at bagong taon, dapat, Enero pa lang ay nag-iipon na sila….ganoon lang kasimple. At, para naman sa iba pang bagay, dapat paglaanan man lang ng baryang  inaalkansiya!
